SAN MICHALI PDO OF SYROS
“San Michali” cheese is produced exclusively on the island of Syros. It is the most expensive Greek PDO cheese. It is made from pure local materials, produced under specific conditions in the area. The primary ingredient for the cheese “San Michali” is the cow milk of Syros, produced by cows that live in this specific area of the island and feed on its flora. Then, special processing is done with traditional technology. For every kilo of cheese, ten kilos of milk are needed. “San Michali” cheese has a salty and spicy taste and a cylindrical shape. It is hard, white to white-yellow, table, with distinctive aroma and solid mass with very small irregular holes.
