Manoura from Sifnos, which has already matured, is put in wine lees (gyli) and then in a jar for further maturation. In the jar, the aromas of the wine lees penetrate the mass of the cheese, creating a wine cheese, with a sharp and spicy taste, a special aroma and a characteristic black skin that can be eaten. This very special cheese is consumed at the time of dessert, together with dried fruits and is ideally accompanied by aged, fortified wines, such as Vinsanto, or Port, or aged spirits.
