CHEESE FACTORY ASOUTIS
VOLAKI FROM ANDROS
On the Cycladic island of Andros, Nikos Asoutis makes, in his traditional cheese factory, from cow milk, one of the most amazing Greek cheeses: the soft Volaki of Andros. It is called “Volaki” because of its shape that looks like a small ball. During the production process, the cheese as it begins to coagulate, is salted and then shaped into a small ball. It is placed in canvas bags and left to dry hanging in cool, shady and well-ventilated places. The soft Volaki cheese has a slightly creamy texture, rich deep aroma and rich taste. It goes well with green salads, is fantastic with freshly baked bread and gives great taste to pies.
